FAQs

How do you keep ground turkey patties from falling apart? ›

Just like in a traditional meatloaf, you need something to hold the meat together. Try adding some dry breadcrumbs to the turkey mixture before you shape the patties. The crumbs will absorb the moisture and, together with the egg, will act like glue and help your burgers maintain their shape on the grill.

What is the best binder for turkey burgers? ›

Use a Binder

Fresh breadcrumbs (made from fresh bread pulsed in the food processor or torn into small bits) are best here, as they retain some moisture which helps to keep them from drying out the burger.

What helps turkey burgers stick together? ›

Most recipes use egg to bind ground turkey, helping the meat to form into cohesive, juicy patties.

How do you keep turkey burgers from drying out? ›

More not-dry turkey burgers

Mashing avocado into the turkey mixture helps prevent the meat from shrinking and drying out during cooking, which is why these stay awesomely juicy, even when they're cooked all the way through.

Do I need a binder for turkey burgers? ›

You need a binder to prevent turkey burgers from falling apart. I used whole wheat breadcrumbs in this recipe, but gluten-free panko would also work.

How do you keep homemade patties from falling apart? ›

Go easy on the shaping. When you're making your burgers, try not to manhandle them too much or else you'll end up breaking the meat into smaller pieces than you have to. We recommend simply shaping the beef into a vague burger shape with the least amount handling as possible.

How to keep turkey burgers from falling apart without breadcrumbs? ›

What are some tips for making thin burgers that don't fall apart when cooking them? there are multiple ways to make thin burgers that stay together. The first way is to use an egg as a binding agent. Make your hamburger mix, and add one raw egg, or two if you've got over two pounds.

What can I use as a binder instead of eggs in burgers? ›

One of the most common substitutes is breadcrumbs, but sometimes the breadcrumbs can fall off when the burgers are cooking if there are too many or they are too dry. Other popular substitutions for eggs include cornstarch, flour, ketchup, porridge oats, cracker crumbs, and ground flaxseed.

How do you bind homemade burgers together? ›

Bind the patty together

If you're going for a leaner meat or adding bulky ingredients (eg spring onions, onions, chillies), add an egg and a handful of breadcrumbs to bind the burgers.

What ingredient makes burgers stick together? ›

Add 1 egg yolk per pound of hamburger. It won't add appreciably to the fat content and will bind the meat beautifully. The other thing you can do is add canned, drained, crushed black beans or chickpeas to the hamburger. The starch from the beans will bind the meat together and add an interesting taste.

How do you improve the texture of a turkey burger? ›

A few tablespoons of panko bread crumbs break up the finely ground turkey; gently tossing all the ingredients together and using a light touch to shape the patties helps keep the texture loose. Baking soda and gelatin keep the meat moist; help with browning, richness, and savory flavor; and provide a juicy mouthfeel.

Does flour help burgers stick together? ›

At home, the texture of hamburger mince mostly depends on the binding agent. Eggs, flour, breadcrumbs and/or milk are often used to bind, however these agents either don't bind, are poor binders, or interfere with binding. The most effective binding agent is salt.

How do you add flavor to ground turkey? ›

There are plenty of easy ground turkey recipes out there. But, you will always need spices like olive oil, kosher salt and pepper, chili powder, and garlic powder. You can add minced garlic, and freshly chopped onions and peppers, for an extra edge.

Why put egg in turkey burger? ›

Since turkey burgers tend to be drier than their ground beef counterparts, we added an egg to ours to help it hold together and give it more moisture. We also use 94% lean ground turkey in our patties—we don't recommend any higher than that, or your burgers might not hold together.

Should you refrigerate turkey burgers before cooking? ›

Absolutely! We love getting ahead when it comes to prep. Make the turkey burger mixture, form into patties, and then cover with cling film and refrigerate up to 1 day ahead. You can also freeze the patties for up 3 months and then use when you need!

My rule of thumb for helping burgers stick together on the grill:

  2. Add 1/4 cup bread crumbs per pound of meat.
  3. Let patties rest in the fridge for 15-20 minutes before grilling.

If you flip it more than one time, it may fall apart on the grill. One flip! eggs and breadcrumbs are for meat loaf. you want a good 80/20 lean to fat beef ratio, you want to have a good skillet or griddle temp going—a good temp—and you want to have a good spatula for flipping the patty when it's time to flip it.
