If you´re looking for a breakfast dish that is easy to make and brings excitement back to the breakfast table, look no further. This One-Pan Egg & Cheese Toast is just that. Packed with flavors, effort-less to put together and all done within minutes.
To make this recipe I used regular white sandwich bread. But you can also use whole wheat, multi-grain or even gluten free. As for the cheese, I used a Spanish Manchego that was aged for 6 months. But you can use any cheese you like.
What really flavors this toast is the egg mixture the bread is soaked into before being cooked. Made with eggs, Spanish paprika, garlic powder and fresh parsley. Of course, you can add whatever spices and herbs you like here. But this simple combination really takes this dish to the next-level.
TIPS & TRICKS to Make this Recipe: You can serve these toast warm or even at room temperature. You can reheat them in the pan or microwave and they will hold for up to 3 days in the fridge, in an air-tight container.

Ingredients
- 6cage-free organic eggs
- 1tspsweet smoked Spanish paprika2.30 grams
- 1tspgarlic powder1.58 grams
- 1/4cupchopped fresh parsley15 grams
- 1/4lbsManchego cheese.11 kilograms
- 6sliceswhite sandwich bread
- 3tbspextra virgin olive oil45 ml
- pinchsea salt
- dashblack pepper
Instructions
Crack the eggs into a large shallow bowl, along with the paprika, garlic powder and chopped parsley, season with sea salt & black pepper and whisk together
Thinly slice the cheese
Heat a large nonstick fry pan with a medium heat and add in 1 tbsp (15 ml) extra virgin olive oil
Once the pan gets hot, dip 2 slices of the sandwich bread (one at a time) into the egg mixture and then into the pan
After 2 minutes flip the slices of bread, add 2 slices of cheese over each bread and place a lid on the pan, cook for another 2 minutes or until the cheese is just melted, then remove from the pan and add over a wire rack, cook the rest of the breads in the same format
Serve hot or at room temperature, enjoy!

Hi Albert Bevia,
I love your cooking, however, oil, even the finest olive oil, is 100% fat, calorically dense and nutrient-poor. Oil injures the Endothelium, the innermost lining of the artery, and that injury is the gateway to vascular disease.
Instead of using oil, I cook with stock or water.
Please look up Dr T. Colin Campbell Centre for Nutrition Studies.
