The good thing about Atole is that it can be made in as many flavors as your imagination allows. Yes, like in this pineapple atole, you can add any of your favorite fruits, nuts, and spices to the mix and it will still be great. One of my favorite flavors is pineapple, so I'm taking advantage of the last cool evenings here where I live and enjoy a nice, hot cup of pineapple atole made with DOLE® pineapple chunks.

My grandma used to make atoles during the cooler months of the year, and would always offer a hot cup of atole to visitors when they came to visit her farm. I wish she could taste my own version with some pineapples chunks added and a dash of ground cinnamon!

I like to have a well-stocked pantry, and for me, that means always having different types of fruits from the Dole brand, like peaches, mangos, and pineapple, for example. Dole makes a robust line of fruit products ranging from fresh fruit to frozen fruit, dried fruit, fruit juices, and much more.

  • Place the DOLE Pineapple Tidbits and their juices with 3 cups of water in your blender pitcher, and process until smooth.(Please check the ingredients list below)
  • Pour the mixture into a saucepan using a strainer. Add the cinnamon stick.

  • Combine the masa-harina with the remaining 1 cup of the water. Mix well.
  • Once the pineapple mixture starts boiling, slowly stir in the masa-harina/water mix, using a strainer.
  • Add the sugar and keep cooking for 6-8 more minutes until mixture has thickened.

Serve hot.

Ingredients

  • 1 20 oz. can of DOLE® Pineapple Tidbits
  • 4 Cups water
  • 6 Tablespoons Masa-Harina
  • ½ Cup sugar
  • 1 Cinnamon stick
  • 1 Teaspoon ground cinnamon

Instructions

  • Place the DOLE Pineapple Tidbits and their juices with 3 cups of water in your blender pitcher, and process until smooth. If you want, before blending, reserve a couple of the pineapple chunks to use as garnish.

  • Pour the mixture into a saucepan using a strainer. Add the cinnamon stick and turn up the heat to medium-high.

  • Combine the masa-harina with the remaining 1 cup of the water. Mix well.

  • Once the pineapple mixture starts boiling, slowly stir in the masa-harina/water mix, using a strainer to avoid any lumps.

  • Add the sugar and keep cooking for 6-8 more minutes until mixture has thickened. Remove the cinnamon stick before serving.

Serve hot.

      No sabes lo feliz que me hizo encontrar esta receta, junto con tu blog. Yo soy originaria de Ciudad Madero (!!!) y tengo 6 años acá en Estados Unidos.         Do not add the sugar. When you are ready to drink it, add sugar substitute to your cup the same way you will do to your cup of coffee.
