f so, you must be familiar with the absolutely divine smell of roasted pecans that seems to waft through all the aisles of fishing poles and camping gear.

It’s like heaven on earth for my husband to peruse those aisles, while it’s heaven for me to sit and nosh on a paper cone full of those delicious nuts and watch the catfish swimming in the giant fish tanks.

egg white / water /pecan halves

cinnamon /granulated sugar /salt

How to make Cinnamon and Sugar Roasted Pecans – Step by Step

  1. Preheat oven to 225 degrees F. Line a rimmed baking pan with a silicone baking mat, or grease with cooking spray.Combine the egg white and water in a mixing bowl; beat with a whisk until frothy.
  2. Fold in the pecans to coat evenly.
  3. Combine the sugar, salt, and ground cinnamon in a container with a lid and shake to mix. Pour over the pecans and stir to coat pecans evenly.
  4. Spread the nuts over the prepared pan.
  5. Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, for about 1 hour.
  6. Cool on pan, and store in an airtight container. Enjoy!

Tips and Notes

  • Substitutions: If pecans aren’t your thing, you could just replace them with whatever your favorite nut is! I’ve made these with almonds many times before, also.
  • Serving idea: These make a yummy snack on their own, but are also make a delicious addition to a salad.

  • Line your baking pan: for easier removal and clean up, line your pan with parchment paper.

    I doubled the recipe and loved the outcome. I might lower the time in the oven but really they turned out great. I made another batch with pumpkin pie spice instead of cinnamon and it also worked out really well. I did accidentally double the amount of sugar but it still works out and all the excess falls off the nuts when mixing them in the oven.

    OMG so freaking good. The only thing I did differently was instead of water to the egg white mixture I put in vanilla extract. This is so good. I can see myself giving this away to family and friends during the holidays. I will definitely keep a batch for myself. Thank you thank you for such a wonderful recipe!

    Can the air fryer be used instead of the oven?

      I haven’t tried these in the air fryer before, so I can’t attest to how they would turn out (or the temp/time ratio.) If you give it a shot, let me know how it turns out!
