Really good weeknight supper, with lots of flexibility. Added grilled corn kernels, used feta and shallots because I had them on hand. Used red potatoes and they needed at least 30 minutes cooking time to be tender. Lemon and dill really brightened the dish.

Added sausage, which I cooked first in the same pan then set aside while I cooked the veggies. I added it back in before adding in the eggs. I forgot the goat cheese at the end, but it was good without it. I will be sure to remember it next time and compare. This was a tasty, easy weeknight meal. Will be making it again!

Made it with frozen hash browns (shredded potatoes) and shallots. Used sharp cheddar cheese. Served it with hot sauce. Loved it!

Here in Sweden this dish is called "pytt i panna" which literally means "little pieces in a pan." They serve it with lingonberry jam on the side, similar to cranberry sauce.

Very good! Though I did augment with a shallot, prosciutto, and pesto. The lemon adds such a nice, bright touch!

Added bacon bits and served with Crystal hot sauce. Though the eggs needed much more than 7 minutes, they were perfectly runny when I took the dish out and it was a huge hit at a potluck brunch. The lemon and dill are an excellent addition.

I made this for dinner, omitted the fennel, added a couple shallots, some browned pork sausage and green beans and it was heavenly! Seriously so good. I followed others advice and didn’t cook the eggs in the oven but steamed them with the lid on instead until they were well set. Lemon juice really does lift the dish, I added about 2-3 tablespoons at the end because of the added sausage which worked great. Parboiled the potatoes first which was a mistake but it still tasted great.

12/14/21 used more asparagus, since I didn’t have fennel. Also, used black pepper-infused olive oil as part of the sauté oil.

This was delicious for Sunday brunch, loved the brightness of the flavors. I added a extra herbs at the end and subbed yellow onion for leek since it was all I had on hand.

I added garlic and shallots right before the leeks and fennel. Fried the eggs separately and plated them on top of each serving.

Added garlic and a few mini peppers. Potatoes were already cooked, so cubed and added to onions to brown. No leeks (onions and garlic instead); didn’t have fennel. Added 1/2 c frozen corn. Added eggs, just put cover over to cook in pan, didn't use oven

Made this with half a bag of frozen hash browns. Added some cherry tomatoes sand sliced mushrooms that were in the fridge. Followed suggestion here to put a lid on the pan instead of using the oven Absolutely great brunch dish.

This recipe is very very versatile and so easy to make your own. I used yukon gold potatoes and sweet potatoes, dill, shallots, and crumbled in some veggie sausage. Definitely need more time to cook the potatoes, I sautéed them to get some color then put them in the hot oven with the other vegetables for about 10-15 minutes, then added the eggs and finished those off. So so so so so good, will be a regular for breakfast.
